No Bake Cacao-Orange ‘Cheese’ Cake Bites
1 cup almond meal (or ground almonds)
1/2 cup quinoa puffs
1/2 cup dates
1.5 Tbsp raw cacao powder
1.5 Tbsp yacon syrup
1/4 tsp cinnamon
pinch of salt
1 cup cashews
1/2 cup fresh orange juice
1/4 cup zest of orange
- First, soak the cashew in water and leave it on the fridge overnight. The next day, soak the dates in hot water for 15mins. Drain the water and take out the seeds. Set aside.
- In a food processor, ground the quinoa puffs. Then add the rest of the crust ingredients. Press the crust mixture in a silicone cupcake bakinh molds. Put it on the fridge while you work on the filling.
- Drain the cashews and put it on the blender. Add the rest of the filling ingredients and blend till it has creamy consistency (no more cashew pieces)
- Scoop the filling into the prepared crust. Put it on the freezer for at least 2hrs. Transfer to fridge 30 mins before consuming.
Decorate w/ orange zest and some cacao nibs.
