Healthy Cacao Quinoa Puff Bars

Ingredients

1.5 cups quinoa puffs
2 Tbsp cacao powder
1/4 – 1/3 cup creamy nut butter
3 tsp yacon syrup
2 tsp goji berries
sea salt

Preparation Method

  1. In a large bowl, combine quinoa puffs and cacao powder and stir.
  2. Add creamy nut butter. Use hands to mix well so as to coat the quinoa puffs as evenly as possible.
  3. Add yacon syrup, sea salt and goji berries. Stir to combine.
  4. Line a baking dish with baking paper and transfer the puffs.
  5. Compact it into a rectangular block around 2-3cm height using your hands or cup to press.
  6. Bake in the 100 degrees celcius oven for 12-14 minutes.
  7. Remove from oven and let it cool completely. Once cooled, cut them into bars or break them into bite sizes.
  8. Enjoy as a healthy snack or with milk. If not consumed immediately, keep in airtight container and store in fridge.
