Ingredients (serves 2)

  1. 1 cup boiled red kidney beans
  2. 1/4 cup white quinoa
  3. Red and yellow bell pepper, cubed Onion and garlic, chopped Broccoli, cut bite size
  4. Seasoning blend, I used Mr. Dash brand from @fairpricesg
  5. Salt to taste
  6. Olive oil



  • Quinoa cooks quickly. Use this simple ratio 1:2
  • 1/4 cup quinoa @naturesuperfoods
  • 1/2 cup water
  • Bring the quinoa to a boil. Once boiled, stir in the quinoa then turn the heat down to low. Cover and simmer until all the liquid is absorbed, total cooking about 15 minutes. Turn off heat and let stand, covered, for 10 minutes. Set aside

    Preparation Method

    1. Heat a large pan to medium. Add the onion, garlic, Sauté until the onions are slightly browned.
    2. Add broccoli and bell peppers and a dash of seasoning blend, cook until vege soften.
    3. Stir in red bean followed by cooked quinoa.
    4. Season with salt, Taste and adjust the seasoning. Serve hot.
