Bubur Sumsum (Coconut Rice Porridge)

Bubur Sumsum is a traditional Indonesian comfort food typically found during Ramadan.  Made of coconut milk and rice flour, this sweet treat is cooked with pandan leaves for added fragrance and flavour. It’s gluten free, dairy free, refined sugar free and it also fits perfectly in a vegetarian & vegan diet.

Recipe (Serves 5)

2 1/2 Cups Coconut Milk

1/2 Cup Rice Flour

1/2 TSP Salt

3 Pandan Leaves Knotted

1/2 cup of Organic Coconut Palm Sugar

1/4 cup water

Toppings: Yacon Syrup & Dried Slices Yacon Root

 

IINSTRUCTIONS

  1. In a pot, combine coconut milk, rice flour, and salt. Stir to mix all ingredient well and make sure there is no lump in the mixture. Add in the pandan leaves and cook on low heat. Constantly stirring until it started to boil and thickened. Turn off the heat.
  2. Melt the coconut palm sugar with water in a small saucepan and cook on low heat until slightly thickened. Strain and then  set aside.
  3. Scoop the bubur into a serving bowl and pour the coconut syrup generously on top of it.
  4. Drizzle with yacon syrup and topped with yacon syrup slices (optional).
