Banana Muesli Pancake
Nature’s Superfoods Coconut Oil for Cooking
- Mash 1.5 ripe bananas into a paste.
- Add 2 whole eggs and 1tsp of baking soda and mix well
- Add 1/2 cup muesli porridge and incorporate into a batter
- Use 1/2 tbsp of coconut oil to coat a non stick pan and heat on low heat
- Cook for approx 70-90s each side
- Slice the remaining 0.5 banana and top it on top of the pancakes along with goji berries and serve immediately
