Are cacao and cocoa the same?
The term ‘cacao’ pronounced as ‘ka-kow’, generally refers to the raw (unroasted), less processed cacao bean products, while cocoa is the more commercial term used for cacao that is more processed (usually roasted), including Dutch-processed cocoa which is alkalized. Cacao is generally lighter in color and milder in flavor compared to cocoa products.
