What is the difference between Cacao Powder vs Cocoa Powder?

Cacao powder is made from cold-pressed unroasted cacao beans, while cocoa powder is made from cacao beans roasted at high temperatures. Cacao powder tends to have a more bitter, intense chocolate flavor compared to cocoa powder’s more mellow taste.
Nutritionally, raw cacao powder retains more antioxidants, fiber, minerals like magnesium, potassium, and iron since it undergoes less processing than cocoa powder.
In baking, cacao powder can directly substitute for natural cocoa powder, but less quantity is needed since its flavour is more potent. While both are nutritious, cacao powder is generally considered the healthier option as it is minimally processed and raw compared to more highly processed cocoa powder.
